Die Verwirrung über die Aspekte rund um den Säuregehalt von Olivenöl ist groß, da die Bedeutung des Begriffs, auf den er sich bezieht (Säure), die Etikettierung der Produkte (Messwerte bezüglich des Grades und Messwerte bezüglich des raffinierten Öls) und das fehlende Wissen über die Ursachen des Säuregehalts des Öls verwechselt werden.
Traditionell wurde das Öl gewonnen, indem die Olivenpaste zwischen zwei Matten (eine Matte ist eine Platte aus Espartogras) eingelegt wurde, die wiederum mit einer Metallplatte gepresst wurden.
